The is a very simple, quick veggie side. It is also my husband's favorite egg/veggie Chinese dish. On this blog you can also find Tomato Egg and Spinach Egg.
This is often prepared with a mild green chili but you can choose as spicy a pepper as you want to suit your own taste.

Green Chili and Egg
5 eggs whisked
1 mild green chili
2 cloves garlic
1/2 tsp. salt
1/4 cup chicken broth mixed with 1/4 tsp. cornstarch
drop of sesame oil
Whisk the eggs until well beaten and slice the pepper into rings. Heat wok on high and add a little oil. Add in green chilies and stir fry until tender crisp. Add in garlic and beaten eggs Stir fry until the eggs are cooked, sprinkle with salt and and chicken broth mixture and sesame oil. Toss then remove to a serving dish and sprinkle with sesame seeds.
