Taiwan has many Dan Bing varieties. This version is made with a batter and is more crepe like. All are delicious but the crepe variety featured in this post are much faster and easier to cook up.
The ones in the picture have chopped green onion in the batter but it is also done plain. After it is cooked up you can just roll it up and Dizzle with Sweet Sauce (recipe found in this post) or sweet chili sauce or you can stuff with pork floss. thinly sliced ham or sausage. Corn and processed cheese slices can also be added on top of the egg while it is cooking. Corn and cheese Dan Bing was my favorite way to have Dan Bing while living in Taiwan.
1 egg
1 cup water
1 cup flour
1/2 tsp. salt
1 Tbsp starch
1/4-1/2 cup additional water
Beat egg and mix in water. Add four, salt and starch. Stir until smooth. add additional water until you have a thin batter. You can add chopped green onion at this point. Let the batter rest for 20 minutes. Heat pan or electric grill over medium heat or 5 for about 10 minutes. Pour 1/3 to 1/2 cup batter into pan and turn pan till the batter covers the bottom of pan. pour two beaten eggs over the batter and turn the pan. You can add corn and cheese at this point. When the egg is set roll up and remove from pan or put some pork floss, ham or sausage down the center before rolling up and remove from pan. Serve with sweet chili sauce and/or sweet garlic soy paste. Alternately you can slice which makes it easy to pick up with chop sticks and dip.
