台式蛋饼 Taiwan Crispy Breakfast Egg Wrap-Dan Bing


If you have been to Taiwan you are very likely to have tried Dan Bing and also likely to still have cravings for it.You don't have to suffer craving anymore because this post will teach you how you can make them at home including the delicious Sweet brown sauce that they serve it with in Taiwan!
You can find Dan Bing at just about every breakfast shop in Taiwan. They are widely popular. All across Taiwan. I am so excited for all you who have not had Dan Bing to taste this wonderful dish. There are many way to make Dan Bing. My favorite Dan Bing to order in Taiwan was stuffed with processed cheese and sweet corn. I also had it with fillings of ham and cheese, bacon and cheese, pickled cabbage or pork floss. What is your favorite filling for Dan Bing?
For a super quick everyday version you can buy green onion pancakes from an Asian super market or you can use Mexican flour tortillas as well. Flour tortillas don't give you the same taste or texture but still delicious and convenient. Taiwan also makes a less common version of Dan Bing that uses a crepe batter instead of Lotus Leaf Pancakes a.k.a Mandarin Pancakes. This method is a little quicker as well. So delicious anyway you make it. I love this for breakfast, lunch or dinner and a glass of Sweet Soy Milk to go along side makes this even more complete.

Ingredients for 1 egg Wrap
2 eggs
1 tsp. green onion, minced
pinch of salt
1/2 Tbsp. milk

Pancakes
2 cups flour
1/4 tsp. salt
1/4 tsp sugar
1/2 cup hot water (60 degrees Celsius/hot shower temp.)
1/4 cup ice water or as needed


Taiwan's Sweet Breakfast/All Purpose Sauce
3 Tbsp. sugar
2 Tbsp. Sweet soy sauce (It will be thick like oyster sauce, in a pinch you can sub. ketchup)
1 Tbsp. regular soy sauce
1/2 cup water or coca cola (if using coke reduce sugar to 1 Tbsp.).
1 clove garlic, minced
1/2 Tbsp. starch

Mix together 2 cups flour, 1/4 tsp. sugar and 1/4 tsp. salt. Add boiling water a little at a time until a crumbly mixture forms then add ice water until a stiff dough forms.  Place on a floured surface and knead for 10 minutes or until smooth and silky.
Cover the dough and let rest for 30 minutes.
Meanwhile make Sweet Sauce by combining 3 Tbsp. sugar, 2 Tbsp. Sweet soy sauce, 1 Tbsp. regular soy sauce, 1/2 cup water or coca cola(if using coke reduce sugar to 1 Tbsp.), 1 clove garlic, minced, 1/2 Tbsp. starch in a small pot. Bring to a boil and cook until thick.
Divide the dough into 10 portions.
If you want to add green onion to the pancake then flatten each portion of dough and top with about 1 tsp. chopped green onion. You don't want to over do it on the onion or they will rip holes in the dough as you roll it out. 
Pinch the dough closed then flip over and proceed with the steps below.
Flatten each portion of dough into 2 inch circles and brush with oil then dust with flour.
Brush on another layer of oil.
Place dough circles on top of each other in groups of two.
Lightly oil a surface then roll out the dough stacks until they and about 8 inches in circumference.
Heat a pan over medium low heat and then brush pan with a little oil and cook each pancake on one side until little bubbles form and the pancake puffs. If the pancake doesn't puff you will need to increase the heat. Turn over and heat until just cooked. You don't want a lot of browning, cooking too long with dry out the pancake.

Once cool enough pull the pancakes apart.
This is what they should look like.
Beat two eggs with 1/2 Tbsp. milk, a pinch of salt and some chopped green onion if desired. You can also add sweet corn to the egg mixture.
Heat a pan over medium heat. Add 1 Tbsp. oil and swirl around the pan. Pour in the beaten eggs and top with a pancake. If desired you can top the egg with cheese, ham, bacon, pork floss, pickled cabbage, etc. before topping with the pancake.
Once the egg is cooked through flip and fold over and add another 1/2 Tbsp. or so then unfold and fry the pancake side.
When the pancake is lightly golden brown, remove from the pan and cool.
Once cool roll up and cut into bite size sections.
Drizzle with Sweet Sauce and serve.
So light and airy, soft and crispy and the sauce makes the flavor out of this world.
