Custard Tarts with Portuguese pastry were introduced into Hong Kong in the 1940's by Cha Chaan Teng, a Hong Kong Based Canto-western Restaurant by way of the Portuguese colony of Macau. Hong Kong Egg tarts are an adaption of Pastel de Nata found in Macau. I love how flaky and delicate the shell is with a rich smooth slightly sweet custard. Love at first taste!

蛋花玉米汤 Sweet Corn Egg Drop Soup
Egg drop soup is a well known dish outside of China and versions of egg drop soup are too many to name. The recipe I want to share with you today is a thick and creamy sweet corn egg drop soup. I fell in love with this soup at Mcdonald's of all places in Taiwan. The Mcdonald's version has big delicious chunks of ham inside the soup.

蛋炒饭 Egg Fried Rice
This style of fried rice is what you typically find in restaurants in China. Other versions can be found but are not near as common. Soy sauce fried rice, also very very tasty, was the standard version that I saw at restaurants in Taiwan but can also be found in China. This recipe was a request from my husband. He ate tons and tons of egg fried rice in China.
Because I didn't want to post until it was absolutely delicious to me and at the same time it had to get approval from my husband this post took a number of trials and lots of help from some master chefs. At least in Beijing and at the restaurants we went to, I wasn't a huge fan of egg fried rice. I found it super oily and lacking in the robust flavor I was used to in Taiwan. But after playing around with all the tips and tricks I learned on cooking shows I am totally addicted to egg fried rice. This recipe is the bomb!

肠蛋饼 Soft Egg Bing
Taiwan has many Dan Bing varieties. This version is made with a batter and is more crepe like. All are delicious but the crepe variety featured in this post are much faster and easier to cook up.
The ones in the picture have chopped green onion in the batter but it is also done plain. After it is cooked up you can just roll it up and Dizzle with Sweet Sauce (recipe found in this post) or sweet chili sauce or you can stuff with pork floss. thinly sliced ham or sausage. Corn and processed cheese slices can also be added on top of the egg while it is cooking. Corn and cheese Dan Bing was my favorite way to have Dan Bing while living in Taiwan.

蛋包饭 Fried Rice Egg Wrap
In China, fried rice is the ultimate way to use up leftovers - you can add just about anything. Start with the basic recipe and then make it your own. The egg wrap just makes it that much more interesting. You can drizzle some thinned out ketchup over the top, or make it even more amazing by smothered it in curry sauce, my personal favorite way to enjoy this dish. Man I miss Taiwan's omelette wrapped rice curry sauce, I will have to work on a recipe for that soon! Another option is to drizzle it with sweet chili sauce. Yum!
