蛋花玉米汤 Sweet Corn Egg Drop Soup


Egg drop soup is a well known dish outside of China and versions of egg drop soup are too many to name. The recipe I want to share with you today is a thick and creamy sweet corn egg drop soup. I fell in love with this soup at Mcdonald's of all places in Taiwan. The Mcdonald's version has big delicious chunks of ham inside the soup.

咖喱鸡肉盖饭 Japanese Influenced Chinese Chicken Curry Over Rice

As promised here is my favorite tried, tested, delicious and true recipe for Chicken Curry. You can find the original recipe at www.yacook.org/node/1156. The recipe I have linked for you is just perfect, same taste I remember from Taiwan. The only changes that I made was to swap out the store bought curry roux for a homemade curry roux as well as a few spice additions. Some people like their curry thin and others like it thick. I like it some where inbetween and that is what this recipe will give you. For a thin curry just reduce the flour in the roux to 3 Tbsp. For a thick curry increase the flour to 5 Tbsp.

大鸡排/香鸡排 Taiwanese Giant Fried Chicken Breast

Taiwan is famous for their street food and especially their night markets. Much of the food you find in Taiwanese night markets has been deep fried in some way like Taiwan's 大鸡排 Giant Fried Chicken Breast. Maybe not the kind of food you want to eat everyday but for a thrilling night out Taiwan style it is just perfect. Hot, juicy and moist chicken bursting with exotic flavor, encased in a delicious crispy coating and sprinkled liberally with chili powder and Sichuan peppercorn salt. Yum! Best Fried Chicken I have ever had.

肥牛饭 Beef Rice Bowl

Paper thin slices of beef and onion simmered in a sweet and salty sauce flavored with rice wine, soy sauce, sugar and mirin. It is served poured over a bowl of hot rice. The delicious juices seep down into the rice for delicous flavor in every bite. For those of you who are familiar with Japanese Donburi dishes this is one of the many versions but with beef.

台南炒米粉 Tainan Stir-fried Rice Vermicelli

Many versions of Stir-fried Rice vermicelli can be found all over Asia. In Sichuan, this dish is called ants climbing up a tree' and is tossed with chili oil. The version of this dish I have here is from Taiwan, specifically Tainan, also called 'The Phoenix City' and is the oldest city in Taiwan. I spent a year and a half in Taiwan and the rumors about the food being delicious are true. Everything I tried there was bursting with flavor.

肠蛋饼 Soft Egg Bing

Taiwan has many Dan Bing varieties. This version is made with a batter and is more crepe like. All are delicious but the crepe variety featured in this post are much faster and easier to cook up.
The ones in the picture have chopped green onion in the batter but it is also done plain. After it is cooked up you can just roll it up and Dizzle with Sweet Sauce (recipe found in this post) or sweet chili sauce or you can stuff with pork floss. thinly sliced ham or sausage. Corn and processed cheese slices can also be added on top of the egg while it is cooking. Corn and cheese Dan Bing was my favorite way to have Dan Bing while living in Taiwan.

I must of eaten this dish hundreds of times during my time in Taiwan. I never got tired of it and I have been trying to find a recipe just like what I had there for the last almost 6 years.I finally have the perfect recipe that brings back so many memories for me. 台式凉面 Taiwan Style Cold Sesame Noodles

This is a delicious cold sesame noodle dish. This is both a popular street food and home cooked dish in Taiwan. When I lived in Taiwan I would often grab cold sesame noodle out of the fridge at 7-Eleven for a quick and delicious lunch. The one at seven eleven came with two sauce packets- a sesame sauce and a sweetened vinegar sauce like you see in the photo below. In home cooked recipes all ingredients are just mixed into one sauce.

This was a dish I got out at restaurants often when I lived in Taiwan. One of my favorites, but I have way too many favorites from Taiwan. Taiwanese food is a mixture of Chinese, Haaken and Japanese cooking styles. No wonder I like it so much.

I can't say delicious enough; flaky pastry encasing flavor bursting fillings. The first time I had these was in Beijing but they are from Taiwan. There were a handful of shops selling these in Beijing and the line ups were insane when ever we would go but they were well worth the wait.

韭菜盒子 Chinese Garlic Chive Pocket

The English have their turnovers and the South American's their Empanadas. I am sure there are many other cultures that have their own versions of this tasty snack. Knowing this I was still a little surprise when I first discovered that Chinese also have there own version that is pan fried. These are done Taiwan style but not unlike turnovers or empanadas, there are many variations. Those found in Beijing leave out the pork and noodles and have a simple filling of chive, egg, chicken bouillion and sesame oil, you can watch this style being made in this video here.
