腰果玉米 Cashew Corn

Wow, do Chinese ever know how to make vegetables show stoppers and I love it.
I have been craving this everyday since I made it. My husband Mike told me about this dish he really enjoyed that is called 松仁玉米 pine nut corn, when we first got married. We both think this version of the dish with cashews is even better. Hope you all try it soon. Meatless Monday is a practice
that has been growing in popularity, in the west, in an effort to contribute to solving world resource shortage as well as for health reasons. Our family has been trying to have a meatless day or two every week which has been really hard until I thought of the idea of looking up vegetarian recipes in Chinese instead of in English. Asia totally rocks when it comes to vegetarian food. I remember going to vegetarian buffets in Taiwan that I was just totally amazed by. Even if you don't speak or read a word of Chinese I want to teach you how you can search the Chinese net for such recipes. Put in these characters 素食食谱into the search bar. Go into images, look at the pictures and see which ones look interesting to you, click on the picture to take you to the site. Copy and paste the recipe into a translator such as Google Translate and cook away. You could do this with Hindi as well. From what I understand India super duper rocks vegetarian recipes. Just ask an online translator how to say vegetarian recipes in Hindi.

1 large carrot, diced small
4 cups corn
1/2 cucumber, diced small
1 cup roasted cashews
1 inch ginger minced or 1-2 tsp. ground ginger
3 Tbsp. Butter or more as needed
1 tsp salt or to taste (right on the verge of too salty but not, enough that it is super flavorful)

Preheat your wok or skillet over medium high heat. Melt butter and through in carrots and toss constantly being careful not to let the butter burn. After about a minute add in the corn and ginger. Continue to toss another few minutes or until corn starts to get toasted. Add in salt to taste and roasted cashews then add in cucumbers and remove to a serving dish.
